Here they show as gunflint and herbs framed by bergamot zest, fresh ginger and profoundly intense structure. Fruit takes a back seat – or even the trunk – in this cuvée. Ripping acidity and persistent tannins yield a white wine beyond compare. Pair with shellfish and scallops.
